It's time for another Food Bloggers Challenge and this month is avocado. I love avocado's. They're so yummy in your tummy good. This is one of my favorite fruits. This month I've made for y'all a yummy avocado scramble. Not only is it yummy in your tummy good, but good for y'all too!
2 large eggs
1 tsp. chili powder
1 medium Hass avocadp
1/4 cup each green, red, and yellow bell pepper
1/4 Vidalia onion
1/4 red tomato
3 Tbs. cooking oil
1 teaspoon lime juice
Dice the peppers, onion, and tomato into small pieces;enough for 1/4 cup each.
Add oil to skillet.
Cook veggies over medium heat until tender.
Half avocado and cube 1/2. Save other half for garnish.
Combine eggs, chili powder,cubed avocado and 1/2 teaspoon lime juice. Whisk gently.
Pour over veggie mixture and whisk until egg mixture is set.
Remove from skillet and garnish with avocado slices and 1/2 teaspoon lime juice.
Note: You can add sweet corn, black beans, or green chili's.
