Summer Coleslaw #TheSaladBar



There's nothing more cooling on a hot summer day than a refreshing summer coleslaw with yummy in your tummy goodness. This month I'm joining The Salad Bar on FB for July Potluck Salads and bringing my yummy summer coleslaw to the picnic y'all. Enjoy...


Ingredients:
1/2 green cabbage shredded
1/2 red bell pepper-seeded and diced
1/2 red onion-chopped
pinch salt and pepper
bacon crumbles if desired
raspberry Merlot olive oil vinaigrette(store bought)

Directions:
Combine cabbage and salt, squeeze any excess water from cabbage. Add bell pepper, onion, and pepper. Mix well. Drizzle about 1/4 cup vinaigrette around the rim of coleslaw. Fold into coleslaw mixture. Chill about 30 minutes. Top with crumbled bacon if desired.

The addition of the bacon to this salad sounds just perfect! I am very fond of coleslaw and will give this one a try. I am pinning for later reference!

This is a unique to make coleslaw. I like the addition of green pepper and red onion - definitely takes it up another notch from traditional cole slaw!
