
Open-faced Zucchini Omelet with Red Bell Pepper and Feta
Ingredients:
- 3 medium zucchini
- pinch salt
- pinch pepper
- 2 tablespoons cooking oil
- 1/2 medium red onion-chopped
- 1/2 lemon-juiced
- 1/2 red bell pepper-seeded
- 9 large eggs
- 6 oz. feta cheese
- 1 tablespoon chopped oregano
Directions:
- Preheat oven to 350 degrees
- Dice zucchini and bell pepper, add salt and place in colander to drain.
- Make sure no water is left in the zucchini-bell pepper mixture.
- While the veggie mixture is draining, add 2 tablespoons oil to cast iron skillet, heat over medium heat and add onions.
- Cook onions until golden brown about 2-3 minutes.
- While onions cook, beat eggs and lemon juice together.
- Add veggie mixture to onion, cook until hot, add egg mixture.
- Continue cooking lifting edges so egg mixture can go underneath, cook about 5 minutes until almost set.
- Add feta cheese and oregano, place in oven about 5 minutes until completely set.

We are omelet eaters from way back and as far as I am concerned, they make the best dinner. I love the vegetables in yours which surely makes it healthy, despite the cheese and egg yolks. Beautiful!

I've never thought to add a touch of fresh lemon juice to an omelette. It must brighten it up and give an extra freshness to the veggies. Nice omelette and what better way to prepare than in a cast iron skillet.

I'd like to try this recipe; I tend to forget to incorporate feta in recipes, and this is a great way to do that, with veggies.
