Behind The Curtain Dessert Challenge: No Bake Blueberry Lemon Cheesecake

This month I'm trying something new. I'm part of  the Lady Behind The Curtain Dessert Challenge for the first time. I'm so excited to be part of this great challenge. The rules are simple: two ingredients to make one yummy dessert.  On the second Thursday of the month all participating bloggers will post their creation. You can see all the yummy in your tummy desserts by clicking on the participating links at the bottom of this post.

This month's yummy ingredients are blueberries and lemons, two of my favorite fruits. I don't know about y'all, but July in the South is sweltering. I try to keep it simple and heat free in the kitchen, so that's why I love no bake cheesecake so much.

1 oz. package cream cheese
1 14 oz can sweetened condensed milk
2 lemons
1 graham cracker crust
1 pint blueberries
lemon zest 

Zest lemon-set zest aside
Combine cream cheese, sweetened condensed milk and juice of one lemon together in mixer. Mix until well blended. Fold in about 1 cup blueberries and lemon zest. Pour into graham cracker crust, chill about 3 hours until well set. Slice lemon, add to top of chilled pie. Add blueberries. Serve and enjoy!

This is our favorite no bake cheesecake. I always do strawberries but will definetely have to top it with blueberries next time. Delicious!
