DEVO Oil and Vinegar – September Special-Chicken Veggie Medley

I'm a Devo Diva and this is the first month I get to try the great flavor combinations of olive oil and balsamic vinegar. September's combination is Jalapeno White Balsamic Vinegar  and Roasted Onion and Cilantro Extra Virgin Olive Oil . I love these great flavors and couldn't wait to make a yummy in your tummy dish. This month I created Chicken Veggie Medley.

This is a simple and easy dish to make with only a few ingredients.


Ingredients:
4 boneless, skinless  small chicken breast
1 bunch broccoli florets(about 1 cup)
1 cup cooked rotini pasta
1 15 oz. can sweet corn-drained
1 small bag frozen carrots-thawed
Devo  Jalapeno White Balsamic Vinegar
Devo Roasted Onion and Cilantro Extra Virgin Olive Oil 


Directions:
Add 4 tablespoons olive oil to skillet and add chicken breasts. Cook over medium heat until cooked thoroughly. Remove from heat,drain excess oil on paper towel, chill in refrigerator.
Toss veggies and pasta in balsamic vinegar(to taste) in large salad bowl
Remove chicken and chop into bite size pieces, toss with pasta-veggie mixture. Serve chilled.

Weekday Supper- Sassy Sausage Jambalaya #weekdaysuper

My granny always told me good Southern food can be cooked a thousand ways to Sunday, but great Southern food needs a little sass. I took my granny's advice and added a little sass to my down home Southern comfort food.

One of my favorite comfort foods is sausage jambalaya. I love the richness and spiciness of this classic Southern dish, but for my hungry bunch, I needed something quick and easy.

With only five ingredients you can go from skillet to table in five minutes. 

Ingredients: 
1 cup UNCLE BEN'S® READY RICE® Cajun Style or Red Beans and Rice
1 each red, green, and yellow bell pepper- 1/2 each diced
1 Vidalia onion- 1/2 diced
1 large firm red tomato-1/2 diced
1 16 oz. pkg. smoked sausage 
3 tablespoons butter

Directions:
Add butter to skillet, melt over medium heat
Cut the sausage into 1 inch bite size round pieces
Dice veggies
Place veggies in skillet, saute about 1-2 minutes until the veggies are well married.
Add smoked sausage(do not let sausage fry). Cook until juices pop.
Place rice in microwave per package directions and add to veggie-sausage mixture.
Continue to simmer about 3 minutes to let the flavors blend together.

Avocado Corn Chip Salad with Chili Dressing #‎TheSaladBar‬


This month I'm joining The Salad Bar on FB for avocado month. I love yummy in your tummy avocados and a while back I won a case of Hass avocados. Y'all I was in avocado heaven. I couldn't wait to create some yummy deliciousness. 
 For this challenge I've made for y'all an avocado corn chip salad with chili dressing. Note: You can add sweet corn or black beans as well.


Ingredients:
1 medium Hass avocado
1/4 cup chopped Vidalia onion
1/4 cup chopped red bell pepper
1/2 cup corn chips
1/2 lime juice

Directions:
Cut avocado in half and remove pit; dice and sprinkle with lime juice.
Mix together with chopped onion and bell pepper.
Place corn chips on top.
Serve with chili dressing.

Chili Dressing:
Combine 1 Tbs. mayonnaise, 1 Tbs. chili sauce, 1 teaspoon chili powder, and 1/2 lime juice together in mixing bowl. Whisk together and serve over salad. Chill before serving.

Seasons Harvest Joe's Mustard Review and Giveaway

Being from the South I love mustard y'all! Give me any flavor and I'm in Southern heaven. Recently I had the opportunity to try Seasons Harvest Joe's Mustard. This yummy in your tummy mustard will make your tongue tingle and your tummy twang!
All natural ingredients, totally fat-free
Orange marmalade, prepared mustard, apricot preserves, honey, horseradish, mustard seed.

Joe's Mustard can be eaten on anything, but today I'm trying it as a glaze for turkey meatballs and it's yummy in your tummy good y'all!

I'd never heard of Seasons Harvest until I found them on FB. Because I love to cook with mustard I love the fact Seasons Harvest uses all natural ingredients, they've been in business 23 years, and they're located in the US. All of their formulas are based on recipes handed down from generations of cooks, just like my granny.

Is y'all's mouth watering yet? Here's my recipe for turkey meatballs with Joe's Mustard.

Ingredients:
12 oz. ground turkey
2 tsp. season salt
1/2 tsp. black pepper
1/4 cup sesame pretzel bread crumbs
1 chopped green onion

Directions:
Preheat oven to 350 degrees
Combine all the ingredients and form about 7-8 meatballs
Place in shallow pan and bake 20-30 minutes until golden brown.
Remove from oven and drain any grease; brush with Joe's Mustard.
Return to oven  for 2-3 minutes until glaze is bubbly.

Kay's Naturals High Protein Breading Review and Recipes

Although I am a Southern cook, I try to cook as healthy as possible. Sometimes that's not always easy, but with Kay's Naturals High Protein Breading cooking supper for my hungry bunch has gotten a lot more tastier and healthier. 

We're not completely gluten free but I'm trying to slowly work no-gluten into my everyday cooking. When I got the opportunity to try gluten free pretzel breading I couldn't wait to try it in my kitchen.

I received 3 6 oz. bags of assorted pretzel breading and 3 1.2 oz bags of pretzels.

In my box I got Original Flavor Pretzels, Jalapeño Honey Mustard Pretzels, and Cinnamon Toast Pretzels. All of the pretzels are gluten free and yummy as well. My grandson tore into them before I even got a chance. He loves them!

At least I did get to try the breading. He'd probably would have eaten that if he could have! I received Chili Nacho Flavor, Sesame Pretzel Flavor, and Parmesan Flavor. I couldn't wait to create something yummy in your tummy y'all.

I have tried the chili nacho and parmesan flavors. I haven't gotten to try the sesame pretzel flavor yet, but I know I'm going to cook up something Asian; probably Asian chicken.

Food Bloggers Challenge-Avocado Scramble


It's time for another Food Bloggers Challenge and this month is avocado. I love avocado's. They're so yummy in your tummy good. This is one of my favorite fruits. This month I've made for y'all a yummy avocado scramble. Not only is it yummy in your tummy good, but good for y'all too!

Ingredients:
2 large eggs
1 tsp. chili powder
1 medium Hass avocadp
1/4 cup each green, red, and yellow bell pepper
1/4 Vidalia onion
1/4 red tomato
3 Tbs. cooking oil
1 teaspoon lime juice

Directions:
Dice the peppers, onion, and tomato into small pieces;enough for 1/4 cup each.
Add oil to skillet.
Cook veggies over medium heat until tender.
Half avocado and cube 1/2. Save other half  for garnish.
Combine eggs, chili powder,cubed avocado and 1/2 teaspoon lime juice. Whisk gently.
Pour over veggie mixture and whisk until egg mixture is set.
Remove from skillet and garnish with avocado slices and 1/2 teaspoon lime juice.

Note: You can add sweet corn, black beans, or green chili's.

South of the Border Meatloaf


If you live in the South then y'all have probably had meatloaf on Sunday for supper. My mama made a yummy in the tummy meatloaf and so did my granny. I grew up using their recipe, but since I am a sassy Southern cook, I had to sass the recipe up a bit with south of the border meatloaf with a little kick!



Ingredients:
2 lbs. lean ground beef
1/2 cup milk
1 egg
1 cup Kay's Naturals High Protein Chili Nacho Flavor pretzel breading or similar substitution. 
1 tsp. chili powder
1 cup chili sauce

Directions:
Preheat oven to 350 degrees.
Combine milk and egg; add to ground beef; mix together with your hands.
Add bread crumbs and chili powder; mix well.
Add 1/2 cup chili sauce; form into a ball.
Turn out into a baking pan or loaf pan.
Cook 30 mins.; remove from heat and drain any grease. Top with 1/2 cup chili sauce,
Place back in oven and cook 30 minutes until done.

This meatloaf is sure to be a family favorite for Sunday supper. Enjoy this yummy in your tummy goodness y'all!

Mexican Cornbread


It's time to add a little sass to the cornbread y'all! I grew up eating cracklin' cornbread, but on Fiesta night, I love to add a little kick to the cornbread. This easy cornbread recipe will make your mouth water and your tummy smile.

Ingredients:
2 cups self- rising cornmeal
1/2 cup Kay's Naturals High Protein Pretzel Breading Chili Nacho flavor or any Southernwestern substitution.
1 tsp. chili powder
1 1/2 cup milk
1-2 eggs
1 11 oz. Green Giant Steam Crisp Mexicorn
1 tablespoon lard

Directions:
Preheat oven to 350 degrees.
Combine corn meal, breading, and chili powder in mixing bowl; whisk together.
Add milk and egg; mix until well blended.
Add corn and fold into cornmeal mixture.
Add lard to cast iron skillet, melt over medium-high heat until hot; add corn meal mixture.
Place in oven; cook 30 minutes or until golden brown.

Enjoy y'all with your favorite South of the Border dish!



Reese's No Bake Peanut Butter Pie



One of the things I love about hot summer's in the South is I can make no-bake pies. I love the yummy in your tummy goodness of throwing together these quick and easy pies. With a few ingredients y'all have a dessert your family will be coming back for seconds.

Peanut butter and the South are synonymous, so I whipped up a Reese's Peanut Butter no-bake pie.

For this yummy in your tummy pie y'all only need a few ingredients.

Ingredients: 
1 Oreo graham cracker crust
16 ounces non-dairy whipped topping
6 snack or 3 large size Reeses peanut butter cups
1/2 honey roasted peanuts
1 cup creamy peanut butter
1 14 oz. can condensed milk

Directions:
Coarsely chop peanut butter cups; set aside
Fold 12 oz. of non-dairy topping into mixing bowl(reserve the remainder for top of pie).
Add peanut butter cups and fold in peanut butter; mix well.
Slowly add condensed milk; fold together until stiff.
Fold into pie crust.
Top with remaining whipped topping.
Finely chop peanuts in food processor or blender(do not over chop or y'all will have peanut butter).
Sprinkle top with peanuts.
Chill for 3-4 hours before serving.

Behind The Curtain Dessert Challenge -Peaches and Cream No Bake Pie

Once again, I'm joining Behind The Curtain Dessert Challenge. I love these challenges! Here in the South it's been so hot, that I can't stand to bake anything, so I've been creating no-bake desserts.

Of course the South isn't the South without peaches. This month I whipped up a peaches and cream no bake pie that's so yummy in your tummy y'all.

Ingredients:
1 graham cracker crust
16 oz. container non-dairy whipped topping (reserve 2)
4 medium size peaches
2-3 oz. pkgs. peach gelatin

Directions:
Combine 12 oz. whipped topping with gelatin. Whip until stiff.
Peel and dice 2 peaches; add to gelatin mixture.
Fold into graham cracker crust.
Chill 3 hours.
Top with remaining whipped topping and peeled and sliced peaches.
