On today's special Labor Day menu is my surprise potato salad.
Surprise Potato Salad
3 pounds purple potatoes or red potatoes, peeled, quartered and boiled until Al dente.
sea salt to taste
ground black pepper to taste
6 boiled eggs, chopped
1/2 cup brown mustard
1/2 cup olive oil mayonnaise
1 red bell pepper, seeded and diced
about 5 green onions, chopped (I use the green's as well)
Drain potatoes, cool and add remaining ingredients, mix well.
